A stunning natural-processed coffee from the foothills of Mount Elgon in Uganda, brought to us through Falcon Coffees new partnership with The Coffee Yard and The Coffee Gardens. This coffee embodies the dedication, expertise, and innovative spirit of Norman Mukuru and his team.
The Coffee Gardens, known for their work in Uganda, have had a long-standing relationship with Norman Mukuru, sharing knowledge and collaborating on processing techniques and farmer traceability. This foundation of trust has led to an exciting new venture: The Coffee Gardens are now supporting Norman in exporting his exceptional coffees, including this remarkable "Norman Florals," to the UK and EU.
Norman Mukuru is a true veteran of the Ugandan coffee industry, with nearly 20 years of experience. He established The Coffee Yard, a significant center for receiving and drying coffee, sourcing cherries from the districts of Sironko, Mbale, Bulambuli, and Kapchorwa, all nestled in the foothills of Mount Elgon. Since 2018, Norman has specialized in natural processing, constantly refining his methods to achieve specific flavor profiles desired by his clients.
The journey of Norman Florals from cherry to cup is a testament to meticulous attention to detail. Here's a breakdown of the process:
- Cherry Selection: Coffee cherries are delivered to The Coffee Yard from the four surrounding regions. The cherries are then floated and meticulously hand-picked to remove any defects.
- Drip Drying: The cherries undergo an initial drip-drying stage on raised beds to remove excess moisture.
- Secondary Sorting: A second sorting takes place, separating the cherries based on moisture level and color, ensuring uniformity within each batch.
- Open-Tank Fermentation: This crucial step is what defines the "floral" profile of this particular coffee. Unlike some naturals that are fermented in sealed barrels, Norman Florals undergoes fermentation in open tanks. This specific method contributes to the coffee's unique character.
- Drying: The coffee is then carefully dried on raised beds or tarpaulins for approximately 21 days until the moisture content reaches below 12%.
- Resting, Hulling, and Preparation: The dried cherries are stored to rest and homogenize. Norman and his team then hull the coffee and meticulously prepare the green beans for export, using both hand-picking and a color sorter to ensure only the highest quality beans make the cut.
The result of this meticulous process is a coffee with a cup score of 84 and a truly delightful flavor profile. Expect a vibrant cup with notes of dark cherry and banana, complemented by the sweetness of strawberry and pleasing bitterness of grapefruit.
