In the lush hills of Huila, Colombia, there grows a special coffee variety known as Pink Bourbon. Legend has it that this unique bean, with its distinctive pink hue, was born from a fortuitous cross between the Red and Yellow Bourbon varieties. This Pink Bourbon Creation comes from two farms, Los Pinos and La Primavera, nestled in the Acevedo municipality. These farms are meticulously managed by dedicated farmers Edier Perdomo and Diego Horta.

The Pink Bourbon Creation undergoes a carefully controlled semi-washed process, designed to unlock its full flavor potential. Only the perfectly ripe, pink-hued cherries are hand-picked. The cherries undergo a 24-hour pre-fermentation in cherry, followed by a 36-hour anaerobic fermentation in bags, still in their mucilage. Finally, the beans are carefully dried on raised beds for 15 days. This meticulous process results in a coffee that's both clean and vibrant, with a pronounced fruitiness and complexity.

Pairs perfectly with: The Fatso Home Run bar in the Fatso Foursome. The coffee's bright citric acidity and green apple notes will cut through the richness of the dark chocolate, honeycomb and toffee, whilst harmonizing with the nutty almond flavours. A surprising but delightful pairing.
