Born out of a deep commitment to climate action and community resilience, this exceptional Caturra lot is harvested in the Manzanares municipality and meticulously processed at the renowned El Vergel Estate. Renowned for its superb balance, this Caturra variety represents a hopeful vision for the future of Colombian coffee, where sustainable reforestation goes hand in hand with extraordinary quality.
The Natural Guamo undergoes a highly sophisticated and extended controlled fermentation process, designed to amplify its natural sweetness and complexity. The journey begins with a meticulous selection of perfectly ripe cherries, which undergo a 36-hour anaerobic pre-fermentation in GrainPro bags to develop vibrant, tropical notes. The cherries are then transferred to shaded hermetic tanks for an extended 96-hour fermentation at a stable 23°C. Finally, the coffee is mechanically dried over seven days with precise humidity intervals, followed by a 30-day resting period to stabilize and mature its diverse characteristics.
This painstaking dedication results in a truly magnificent cup. It delivers a complex and beautifully balanced profile, defined by rich cocoa undertones, a vibrant citric acidity, and distinct notes of cherry, blueberry, green apple, and tropical fruits.
