In the high-altitude hills of Caldas, Colombia, the Reforest Project combines climate action and community resilience through an exceptional Caturra coffee lot harvested in Manzanares and processed at the renowned El Vergel Estate. Symbolizing a hopeful future where sustainable reforestation pairs with extraordinary quality, this Natural Guamo coffee relies on a highly sophisticated, extended controlled fermentation process designed to amplify its natural sweetness and complexity.
The meticulous journey begins with perfectly ripe cherries undergoing a 36-hour anaerobic pre-fermentation in GrainPro bags to develop vibrant tropical notes, followed by a 96-hour fermentation in shaded hermetic tanks at a stable 23°C. The coffee is then mechanically dried over seven days at precise humidity intervals and rested for 30 days to stabilize its characteristics, ultimately delivering a complex, balanced cup defined by rich cocoa undertones, vibrant citric acidity, and distinct notes of cherry, blueberry, green apple, and tropical fruits.
